When you’re grilling, smoking or roasting, it is nice to have potatoes cooking as a side while the meat is getting done. I often do potatoes in foil and this version with a touch of lemon is particularly nice.
I did these in my Louisiana Grills Smoker but they can easily be thrown on the top rack of your grill or into an oven. They are very forgiving.
I chop some fresh dill and cut two medium potatoes into about 1/2 inch cubes.
I toss the potatoes with the dill, olive oil and lemon juice.
Put the potatoes in a foil pan and cover with foil.
You can cook these in a smoker or oven from 300 F to 425 F to match your meat. At the lower temperatures, cook them for one hour minutes and at higher temperatures cook them for 45 minutes. You will get more browning at higher temperatures.
You can also put them on the top rack of your barbecue grill while grilling meat for about 30 to 45 minutes depending how hot your grill is.
I was cooking Fancy Shmancy Salmon so I had my smoker set at 350 F. I cooked them for an hour.
Just peel the foil back and serve them but be careful as there will be hot steam under the foil that could burn you.
We served these with Fancy Shmancy Salmon and a noodle salad.
I really like the combination of dill and lemon on potatoes. It gives a simple yet fresh taste that is great for fresh summer potatoes from the garden.
The Old Fat Guy
- 2 medium potatoes
- 15 ml (1 tablespoon) fresh chopped dill or 5 ml (1 teaspoon) dried
- 15 ml (1 tablespoon) olive oil
- 15 ml (1 tablespoon) lemon juice
- Cut the potatoes into 1/2 inch cubes.
- Toss the potatoes in the dill, oil and lemon juice.
- Put the potatoes in a foil pan and cover with foil.
- You can cook the potatoes in an oven or smoker while cooking other dishes. You can use a temperature of 300 F to 425 F. Cook for 1 hour at lower temperatures and 45 minutes at higher.
- You can also cook on the top rack of a barbecue for 30 to 45 minutes.
- Be careful opening the foil as hot steam will escape and my cause burns on bare skin.
