Pan Fried Haddock and Taters

Sometimes you need the basics, no fancy sauces or displays, just good classic food. My mom used to dredge fish in flour and then fry it. I loved it for good reason. It gives the fish a great crust and looks nicely browned. It was usually accompanied by home fries. I needed some!

I took eight small potatoes and cut them into chunks. I added 1/4 cup of water, covered and microwaved just until they were barely fork tender, about 8 minutes but this will vary with the power of your microwave.

While they were cooking in the microwave, I put 25 ml (2 tbsp) of milk in a bowl. I put 50 ml (1/4 cup) of flour, 2 ml (1/4 tsp) salt and 10 ml (2 tsp) of Italian seasonings on a plate and mixed them together.

I dipped two haddock fillets in the milk and then dredged them in the flour.

I put 2 fry pans on the stove. I put one over medium heat and the other over medium high heat. I put 25 ml (2 tbsp) of butter in each of the fry pans.

When the butter began to bubble, I put the potatoes in the hot pan and the fish in the cooler pan.

I cooked for 8 to 10 minutes, flipping the fish once and stirring the potatoes around occasionally. You want the fish well browned on both sides and some colour on the potatoes. Add salt and pepper to the potatoes to taste.

Plate it up and serve.

There is a reason that pan frying fish has been around for a long time It is easy and delicious. Of course, pan fried potatoes go with it perfectly with the crispy exterior and creamy flesh. Have a nice piece of fish soon!

  • 2 haddock or other firm white fish fillets
  • 25 ml (2 tbsp) milk
  • 50 ml (1/4 cup) flour
  • 10 ml (2 tsp) Italian seasoning mix
  • 2 ml (1/4 tsp) salt
  • 50 ml (1/4 cup) butter
  • salt and pepper to taste

Instructions

  1. Put potatoes and water in a covered microwave safe casserole and microwave until just tender, about 8 minutes.
  2. Put milk in a bowl.
  3. Put flour, seasoning mix and 2 ml (1/4 tsp) salt on a plate and mix.
  4. Dip fish in milk and then dredge in the flour mixture.
  5. Put one fry pan over medium heat and one over medium high.
  6. Put 25 ml (2 tbsp) of butter in each fry pan.
  7. When the butter is bubbling, add the potatoes to the hotter pan and the fish to the one on medium heat.
  8. Cook for 8 to 10 minutes, turning the fish once and stirring the potatoes occasionally.
  9. Serve
