We have tried a lot of cocktails and had a lot of fun but there is a downside to experimenting with cocktails. You end up with a lot of alcohol that you don’t know how to use. We bought absinthe to make Sazeracs. They were tasty but don’t use very much absinthe. So what do you do with a mostly full bottle of absinthe? We made an Absinthe Fizz.
We juiced our lemon and added the absinthe, lemon juice, sugar and egg white to a cocktail shaker 1/2 filled with ice.
I shook it hard for at least 2 minutes. and strained it into small highball glasses.
We topped the glasses with club soda and served.
The Verdict
My friend Bill liked these and preferred them over some others we’ve made. I thought they tasted OK but they weren’t the favourite cocktail we’ve made. I would enjoy one if someone served it to me at a party but there are others I like better. They are definitely worth trying to see how you like them.

Yield: 1 cocktail
Ingredients
- 50 ml (2 ounces) absinthe
- juice of 1/2 lemon
- 5 ml (1 teaspoon) sugar
- 1 egg white
- club soda
Instructions
- Put the absinthe, lemon juice, sugar and egg white in a cocktail shaker 1/2 full of ice.
- Shake hard for at least 2 minutes.
- Strain into a small highball glass.
- Top with club soda and serve.

Never had one of these, it looks pretty interesting to me. One thing for sure, you’ll be well stocked for the Holiday’s.
