A Great Easter Dinner
I have posted how to make Double Smoked Ham previously. The method of making one and a video are on that post so I won’t go into a lot of details here. Here is the link to that post: Double Smoked Ham. However, for Easter Dinner I tried a different glaze, Orange Ham Glaze.
I used this glaze on my Double Smoked Ham but it would work on any method you use in cooking your ham.
I started by putting the ham in my Bradley Smoker with the probe from my BlueTherm Duo inserted and used apple and cherry smoke.
While the ham cooked, I made the glaze. The recipe is below.
I brushed the glaze on for the last hour of cooking and then put the ham under foil to rest for 10 minutes.
To carve a ham butt or shank portion, cut along the bone to get a chunk and then carve the chunk.
We served the ham with green salad, Scalloped Potatoes, Copper Penny Carrots, and a nice rose wine. Of course you need an Easter Dessert. My friend brought a nice layer cake and I made Grand Marnier Custard Pie.
The Verdict
This was an incredible Easter Dinner and the glaze made a great addition. There are the traditional glaze ingredients but the orange juice and zest adds a nice flavour note. This will be a go to glaze for the future.
Ingredients
- 125 ml (1/2 cup) brown sugar
- 75 ml (1/3 cup) maple syrup
- 2 ml (1/2 teaspoon) dry mustard
- 1 ml (1/4 teaspoon) ground cinnamon
- 1/2 ml (1/8 teaspoon) ground cloves
- 1/2 ml (1/8 teaspoon) ground nutmeg
- The zest and juice of one large orange
Instructions
- Put all ingredients in a saucepan.
- Heat over medium heat until boiling.
- Reduce heat and simmer for 5 minutes, stirring frequently.
- Brush on ham for last hour of cooking

The meal was terrific. Before I retired, I was on the road most of the time. Being home to eat this kind of meal with friends and family is a major improvement in my life.

What a great ham! 🙂 I have cooked mine first and than baked it along with potatoes. It was sticky and tasty… and the potatoes took the aroma from the ham. I have to try out your recipe next year … looks amazing!

Used your recipe for our first attempt at smoking a ham (first time cooking a ham using any method). Used cherry wood. Turned out fantastic. Used leftover glaze for boiled carrots instead of our standard brown sugar. Carrots had an orange taste but everyone loved them. Thanks for the great recipes. Love the detail and pics. Will try more of your recipes in the future.
