I love cookies. Chocolate chip cookies are particularly good. However,  most chocolate chip cookie recipes have so many chocolate chips in them that you don’t taste the other flavours.

This recipe has enough chocolate chips to give you a chocolate hit but adds chunks of peanuts. Also, the batter has a touch of peanut butter that gives a creaminess to the centre of the cookies.

The recipe is a pretty common  cookie making method.

You preheat the oven to 375 F.

Mix the dry ingredients together:

  • 425 ml (1 3/4 cups) flour
  • 2 ml (1/2 tsp) baking powder
  • 5 ml (1 tsp) baking soda
  • 1 ml (1/4 tsp) salt

Then I put:

  • 175 ml (3/4 cup) butter
  • 75 ml (1/3 cup) crunchy peanut butter
  • 150 ml (2/3 cup) sugar
  • 150 ml (2/3 cup) packed brown sugar

In the bowl of a stand mixer. Beat until fluffy, scraping the bowl and beater once.

Add:

  • 1 egg
  • 3 ml (1/2 tsp) vanilla

Beat until combined

Add the dry ingredients and mix until combined, scraping the bowl and beater once.

Add:

  • 350 ml (1 1/2 cups) chocolate chips
  • 150 ml (2/3 cup) unsalted peanuts

Mix until combined.

Spray a baking sheet with baking spray. Roll the batter into walnut sized balls and place two inches apart on the sheet.

Bake the cookies for 10 minutes until lightly browned on the bottom.

Let the cookies cool for 5 minutes before removing from the baking sheets.

The Verdict

These are a great cookie. They have a crispy crust, a soft interior, a great cooking taste with a touch of chocolate and crunchy peanuts!

Instructions

  1. Preheat oven to 375 F.
  2. Mix flour, baking powder, baking soda, and salt. Set aside.
  3. Put butter, peanut butter and sugars in the bowl of a stand mixer. Mix until light and fluffy, scraping the bowl once.
  4. Add the egg and vanilla and mix until combined.
  5. Add the flour mixture and mix until combined, scraping the bowl once.
  6. Add the peanuts and chocolate chips. Mix until combined.
  7. Roll into walnut shaped balls and place 2 inches apart on greased cookie sheets.
  8. Bake for 10 minutes or until lightly browned on the bottom.
  9. Let cool for 5 minutes on sheets before removing.
