It was Canadian Thanksgiving last weekend. I did the usual turkey thing However, there is a lot to do for turkey and all the fixings. Fortunately, there is an Eagle Brand Condensed Milk recipe that has been around forever and it makes a great basic pumpkin pie.
Hanging my head in shame, I bought a frozen pie shell. I don’t mind using the Tenderflake pie crusts. They have a taste and texture that is almost as good as home made. Add to that, I had a turkey, 2 dressings, potatoes, vegetables, gravy and sundries to prepare. I deserved some convenience.

I just mixed up the filling ingredients and poured them into the frozen pie shell.
I baked it as instructed, let it cool and served it with whipped cream.
The Verdict
This makes a great pie that has a nice texture, a great taste without being too sweet and it comes out like you spent all day baking. Sh! I won’t tell if you don’t.

Thank you! It was a great Thanksgiving. I don’t really mind all the work. I love to cook and Thanksgiving is two days of cooking! Also, She Who Must Be Obeyed tells me I have a lot to be thankful for (she’s right)!
