Shell and devein shrimp but leave tails on. Dry with paper towel.
Mix flour, dill, salt and pepper.
Mix egg, milk and sriracha
Mix panko and dried dill.
Put shrimp in flour with right hand. Put in egg wash with left hand and then onto the bread crumb mixture. Shovel the breading over the shrimp with your dry right hand and put on a rack. Repeat with all shrimp. Spray the shrimp with baking spray.
Put the rack in a 425 F (220 C) smoker or oven for 4 to 5 minutes. Turn the shrimp and cook until lightly golden, about 5 minutes.
