I love Country Style Ribs. It is too bad they aren’t actually ribs. I think the butchers of the world just want to mess with us. There are butt roasts that come from the shoulder and Country Ribs that aren’t ribs. Sigh. Fortunately they are delicious whatever they are.
She Who Must Be Obeyed picked up some Country Style Ribs and I was tasked to cook them. I wanted something a little fancy but was feeling lazy. I had some Sweet Thai Chili Sauce made up and that solved both problems! You can buy commercial sauce but I make my own and you can find the recipe on this site.
I gave the ribs a medium amount of barbecue rub. I used Louisiana Grills Hickory Bacon but you can use your favourite rub.
Then I put them in the Louisiana Grills Smoker which I had preheated to 225 F. You can do these in a 250 F oven or over indirect heat on a barbecue but it won’t have the nice touch of smoke.
I cooked them for 40 minutes then brushed both sides with the Thai Chili Sauce and turned the ribs.
I cooked them to an internal temperature of 150 F which took about another 40 minutes. I gave the ribs another generous brushing of Sweet Thai Chili Sauce and served them with broccoli and pasta salads.
The Verdict
These turned out great! The sweetness of the sauce with the touch of heat is great on pork. It doesn’t hurt that it is easy!

Ingredients
- 6 country style ribs
- 10 ml barbecue rub
- 125 ml sweet Thai Chili Sauce
Instructions
- Rub the barbecue rub into the ribs. Put in a 225 F smoker or 250 F oven or a barbecue over low indirect heat.
- Cook for 40 minutes.
- Brush both sides of the ribs with sauce and turn them.
- Cook to an internal temperature of 150 F, 30 to 40 minutes.
- Brush with sauce and serve.
