Strawberries ripen a bit later here in the mountains but I think they taste better. So, I had fresh local strawberries and it was time for this years jam.
I have used Certo Crystals for years and like the results. I will not copy out the recipe here, it is in every package. However, I will show you the steps so you can see how easy it is.
First you was the strawberries, hull (cut out the white centre) chop them and crush them well with a potato masher.
You add the Certo Crystals to the strawberries and bring the mixture to a boil. Then you add the sugar and return it to a boil for several minutes. Take the jam off the heat. There will be a foam on top, take as much off as you can.
Fill sterilized jars to 1/4 inch from the top. Cover with sterilized canning tops and put on screw bands.
That’s it!
The Verdict: This is so much better than store bought jam. It is lighter and fresher and actually tastes like strawberries. Make some!
