I apologize for not posting for a couple of days but the weather has been fine and I could not resist spending time on the deck with She Who Must Be Obeyed. It is so nice we’ve had a few warmer days.

We needed something quick last night and She Who Must Be Obeyed made a nice sole filet. My assignment was the vegetables. When you are in a hurry and want something more than steamed vegetables. a stir fry is hard to beat.

The best part of a stir fry is you can look at what you have in the fridge and go from there.

What did I have?

• a piece of onion, I cut it into about 75 ml/1/3 cup onion coarsely chopped.
• garlic, I sliced one clove thinly
• dried hot chilies, I used 2 ml/1/4 teaspoon
• 125 ml/1/2 cup sliced red pepper
• 125 ml/1/2 cup slice green pepper
• 175 ml/3/4 cup carrot, medium chunk
• 175 ml/3/4 cup coarsely chopped broccoli
• 175 ml/3/4 cup sliced mushroom
• 50 ml/1/4 cup red wine
• 50 ml/1/4 cup light soy sauce
• 25 ml/2 tablespoons sherry, I used cooking sherry
• 25 ml/2 tablespoons ketchup
• 10 ml/2 teaspoons cornstarch

As with all stir fries, I find it best to use the cooking method of “mis en place” which is just French for having everything prepared in advance. I chopped everything with the onion, garlic and chilies on one plate. The vegetables in a bowl and the mushrooms on a small plate. I mixed all the wine, soy sauce, sherry, ketchup and cornstarch in a cup.

I heated one tablespoon of oil in a wok and heated it until the oil starts to smoke. I tossed in the onions, garlic and chilies. Note, the chilies will set off noxious fumes. It is the price you must pay for that touch of heat. It will only take 30 or 40 seconds for the onion to start to colour. Toss in the vegetables and stir fry for 2 minutes. Add the mushrooms and stir fry for 1 minute. Add 1/4 cup of water and cover. Let steam for 2 minutes. Add the soy sauce mixture and stir. It will only take a minute to thicken. Serve.

The Verdict

Stir frying with the contents of your fridge turns out differently depending on the vegetables you have available. This one was lovely. The colours of the peppers, carrots and broccoli were
gorgeous. The slight heat of the chilies with the sweet of the sherry and vinegar from the ketchup were well balanced.
