The weather is hot and it is perfect barbecue weather. We are blessed with a nice crop of new potatoes. However, we are busy in the yard and we don’t want to be making complex time consuming dishes. Grilled potatoes are an obvious choice for the side dish. This time, I flavoured them with Sriracha Sauce.
I cut 5 medium sized new potatoes into 4 wedges each. Then I mixed the Italian seasoning blend, butter, oil and Sriracha together and tossed the potatoes in the mixture.
I preheated a grill sheet on my barbecue over medium low heat. You can cook them right on the grill but they are a little fussy to turn. There will be some butter mixture in the bottom of the bowl to use as a baste.
Then I put the potatoes on the sheet with one of the cut sides down. Grill with the barbecue closed for about 10 minutes or until browned. Brush the potatoes with the butter mixture and turn to the other cut side.
Grill with the barbecue closed for another 10 minutes. Brush the potatoes with the butter mixture. As the skins brown quicker, turn the potatoes skin side down on the top rack of the barbecue and grill with the barbecue closed for about 10 minutes.
Remove from the grill and serve.
We served these with Teriyaki Salmon, She Who Must Be Obeyed’s bean and carrot salad and deli style coleslaw. I really don’t believe anyone eats better than I do.
The Verdict
I love grilled potatoes. They are crisp on the outside and creamy on the inside. When you add a touch of heat from Sriracha sauce, they are terrific!
The Old Fat Guy
Yield: 4 servings
Ingredients
- 5 medium new potatoes
- 25 ml (2 tablespoon) butter, melted
- 25 ml (2 tablespoon) cooking oil
- 10 ml (2 teaspoons) Italian seasoning blend
- 10 ml (2 teaspoons) Sriracha sauce
Instructions
- Cut potatoes into 4 wedges each.
- Mix remaining ingredients and toss potatoes in mixture.
- Put potatoes, cut side down on barbecue heated to medium low. Reserve butter mixture that remains in bowl.
- Grill for 10 minutes with the barbecue covered.
- Turn potatoes to the other cut side down and brush with butter mixture.
- Grill for 10 minutes with the barbecue covered.
- Put the potatoes on the upper rack of the grill and brush with butter mixture.
- Grill for 10 minutes with the barbecue covered.
- Remove from the grill and serve.
