I like making food from scratch, but it is nice to have some quick convenience food around. The problem is that most convenience food isn’t very tasty. The answer is to make your own convenience food.

I love breakfast sausage and decided to try and make Quick Fry Sausage, also known as Brown and Serve. Quick Fry Sausage are frozen sausage that you can take directly from the freezer and fry them just until brown and eat them. They are already cooked and just need browning and heat.

They must be of a smaller diameter so they will heat all the way through when browning. Thicker frozen sausages may not thaw or get hot by the time the surface is browned.

By cooking them to done at a low temperature, the moisture doesn’t cook out and the surface doesn’t brown, leaving that for you to do on reheating.

I did these in my Bradley Smoker to get some smoke flavour added to them, but they will do well in an oven.

You need some bulk sausage. I made a batch of my OFG Breakfast Sausage. You can use any bulk sausage you like.

I ran the sausage through my sausage stuffer but did not put it in sausage casings. This gives you cylinders of sausage meat. I find the uncased sausage browns better which is good for the quick fry sausage.

You could make them in 3/8 inch (1 cm) thick patties if you don’t have a sausage stuffer.

I cut the cylinders into 4-inch (10 cm) lengths.

I put them in my Bradley Smoker at 180 F (82 C) with hickory smoke. I cooked them to an internal temperature of 150 F (65 C), about 1 hour. You can do them in an oven as well.

Freeze the sausages until ready for use.

To cook the sausage, saute over medium high heat until browned and warmed through.

The Verdict

These turned out very nicely. They aren’t as good as fresh cooked sausage but are close. It is so nice to be able to pull them from the freezer on a moment’s notice and have tasty sausages a few minutes later.
