I love brownies. I particularly love fudge brownies. However, growing up, a neighbour made blondies. They were chewy and butterscotch flavoured. I loved them.

I decided to try and copy the idea.

Preheat an oven to 350 F.

Mix in a bowl:

  • 220 ml (scant cup) Brown Sugar
  • 100 ml (scant ½ cup) Butter, melted
  • 1 Egg
  • 4 ml (3/4 tsp) Vanilla

In a separate bowl, mix:

  • 220 ml (scant cup) Flour
  • 2 ml (1/2 tsp) Baking Powder
  • 1 ml (1/4 tsp) Baking Soda
  • 1 ml (1/4 tsp) Salt

Mix the dry ingredients into the wet ingredients.

Fold 125 ml (1/2 cup) Peanut Butter Chips into the batter.

Grease and 8 by 8 inch (20 by 20 cm) cake pan with butter. Put 15 ml (1 tbsp) of flour in the pan and shake the pan to coat the bottom and sides. Dump out any excess flour.

Spread the batter over the bottom of the pan. Bake for 20 to 25 minutes, until a toothpick inserted in the centre comes out clean.

Let cool for at least 10 minutes. Cut into squares.

The Verdict:

These are a chewy, fudgy, delicious square with a wonderful butterscotch flavour. The peanut butter chips are a perfect complement. Love them.
