There are many great alcoholic drinks for summer days, barbecues and picnics. However, what about the kids, drivers and non-drinkers? Try making them some delicious Lemon Sun Tea.
What is the difference between sun tea and regular tea? Regular tea is tea leaves introduced to boiling hot water. This brings a strong tea flavour with a distinct bitter taste and lots of tannin. A sun tea is tea in cold water allowed to sit in the sun for hours. It gives a more mellow tea with less bitterness and tannin. It is a matter of personal preference which you like more for iced tea. However, most children prefer the milder sun tea.
To make sun tea, put 2 litres (2 quarts) of water in a clear container. Add 3 black tea bags (orange pekoe is the norm but breakfast teas or any other black tea will do). Add 1 peppermint herb tea bag. Cover the tea and let it sit in the sun for three to four hours.
Take the tea bags out of the tea and add 200 ml (3/4 cup) of sugar and 200 ml (3/4 cup) of lemon juice. The tea will get a lot lighter when you add the lemon juice. Stir until the sugar is dissolved.
These amounts make quite a sweet tea with a strong lemon flavour. Feel free to add more or less of each to your tastes.
Also, this works well substituting artificial or natural sweeteners if you don’t want sugar in your tea.
Serve the tea chilled over ice.

Ingredients
- 2 litres (2 quarts) water
- 3 black tea bags (orange pekoe or silmilar)
- 1 peppermint herb tea bag
- 200 ml (3/4 cup) sugar
- 200 ml (3/4 cup) lemon juice
Instructions
- Put water in a clear container and add the tea bags.
- Cover the container opening and put in the sun for three to four hours.
- Remove the tea bags.
- Add the sugar and lemon, stir until dissolved.
- Serve chilled over ice.
