She Who Must Be Obeyed said “Honey, I want chicken wings.”I only had a couple of hours until supper so something too fancy was out of the question. What to do? Obviously, I had to make something with honey. I fired up the Louisiana Grills Pellet Smoker and made Honey Teriyaki Wings.
I developing the recipe I needed quick and easy but wanted sweet, salty and hot. Unfortunately, not too hot. She Who Must Be Obeyed does not like very spicy and the purpose of this exercise was to meet her request.
I started by mixing a glaze of honey, commercial teriyaki sauce and Sriracha sauce figuring that would hit the sweet, salty and hot notes. However, I felt it needed a bit more salty.
I decided to add a salty rub to add to the saucy profile.
I tossed the wings with vegetable oil and then the salty rub. I chose Louisiana Grills Hickory Bacon rub. You could use any salt based rub you like.
I had the grill preheated to 325 F and put the wings on the rack. I smoked for 1 hour. This thoroughly cooks the wings and gives them a nice crispy skin. It actually cooks the wings well above the safe temperature of 165 F but I like the texture it gives.
You could do this by putting the wings on a rack on a baking sheet in a 325 F oven but you won’t get the nice smoky notes.
Here are the wings after 30 minutes.
Here they are after one hour.
I put the wings in a large bowl. I heated the glaze in the microwave until it was hot. I poured it over the chicken wings and tossed to coat.
We served them with rice and broccoli salad.
The Verdict
These were better than most wings I get in a restaurant. The honey gave a nice sweet taste, the teriyaki gave complexity, the Sriracha added heat and the rub gave it a salty kick. The skin was bit through and the meat was moist.
