I was cooking my steak on the Louisiana Grills Pellet Grill (see prior post). You need great potatoes with your steak. The problem with cooking potatoes on a grill hot enough to cook a steak is that the potatoes will over brown before they are cooked. As I was cooking the steak at 525 F on the pellet grill, this would be a problem.
Fortunately, there is a way around this problem. It works well if you are cooking on a hot barbecue and I hoped it would do the same in the pellet grill.
The trick is to precook new potatoes and cook them in a heavy pan put on the grill.
I started by poking 16 small new potatoes with a fork. Then I cooked them for a few minutes in the microwave until they were just done. I put them in a microwave safe casserole with 1/4 cup water and cooked them on high. This took 6 minutes in my microwave but it is very variable depending on the power generated by your microwave.
I cut the potatoes in chunks and chopped onions into a medium dice.
Put a heavy fry pan on the grill with 2 tablespoons of butter in it. Let it heat until the butter is frothy. This took about 3 minutes for me.
Put the potatoes and onions in the pan and toss to cover with the butter. Close the lid on the grill and cook for 3 minutes.
Turn the potatoes, close the cover and cook for 3 minutes longer.
Turn the potatoes and sprinkle with the Italian seasoning mix. Close the cover and cook for 3 minutes.
Turn the potatoes for the last time. Close the cover and cook for 3 minutes.
Remove from the grill, plate and serve.
We served it with steak and stir fried vegetables from our garden.
The Verdict
These potatoes turned out even better on the pellet grill than on the barbecue and that is saying something. They are crispy on the corners, creamy in the centre and the onions give it a great flavour. These always were a favourite and will be a regular on the pellet grill.

- 16 small new potatoes
- 1/4 cup water
- 125 ml (1/2 cup) onion, coarse chop
- 25 ml (2 tablespoons) butter
- 8 ml (1 1/2 teaspoons) Italian seasoning mix
Instructions
- Poke potatoes with a fork.
- Put potatoes and water in a microwave casserole.
- Microwave on high until potatoes are just cooked.
- Cut potatoes into quarters.
- Put butter in a heavy fry pan and put on a grill heated to over 500 F.
- When butter is frothy, put potatoes and onion in fry pan. Stir.
- Close cover and cook for 3 minutes.
- Flip potatoes. Close cover and cook for 3 minutes.
- Flip potatoes. Sprinkle with Italian seasoning. Close cover and cook for 3 minutes.
- Flip potatoes. Close cover and cook for 3 minutes.
- Remove from heat, plate and serve.

Nice call on using the microwave to precook! I used to think the microwave was useless, but now I use it anytime I need to get a hard, dense veggie tender before roasting or frying it.
Thanks. It is the only way to get the potatoes right on a really hot grill. I do use it for some reheating but I think reheating on the stove is better for most things.
