Have you ever been in a hurry for a quick side dish or breakfast item? If so, try this easy method for making fried potatoes. Before I start, let me rant on peeling potatoes. Potato skins taste good and have a lot of nutrients. Don’t peel your potatoes and throw the skins out unless you have to for a specific recipe. Just scrub your potatoes and use them skins on. If you don’t, you are throwing out food.

Microwave as many potatoes as you need following the instructions for your microwave. If you don’t have specific instructions for your microwave, pierce the potatoes several times with a fork. Place them on a plate covered by a paper towel. Microwave on high for 2 minutes. Test the potatoes by seeing if a fork goes in easily. If not, turn the potatoes over and microwave for another 2 minutes and check again. Continue until the potatoes are done.

Chop the potatoes into large chunks.

Melt a nob of butter or margarine in a pan over medium heat. When the butter just starts to turn colour, put the potatoes in the pan. Flip occasionally until the potatoes just start to brown. Add another nob of butter or margarine and keep turning until the potatoes are attractively browned. Season with salt and pepper.
So easy and so good.
