When I had my friend over for Fajitas, I needed a classic drink to go with them. Of course, I made Margaritas. However, these were Classic Margaritas. No sour mixes here, just lime juice, cointreau and tequila.

The hardest part about making a Classic Margarita is squeezing the lime juice. Do not use bottled lime juice, you need fresh squeezed.
To get the maximum juice from the limes, I microwaved them one at a time for 25 seconds. Then I rolled them on the counter under my palm. Finally, I used a small juicer bowl to get out as much juice as possible. I needed about 2 limes per drink.
I ran a piece of lime around the rim of a medium highball glass and then put the rim in some coarse salt on a plate.
I added the cointreau, lime juice and tequila to ice in a cocktail shaker and shook until very cold. Then pour it into the glass and serve.
The Verdict
This is not the sweet margarita served in chain restaurants. It has a distinct lime flavour with some pucker power. It is very refreshing and we like them but they may be tarter than what you are used to. Try it, you will like it!

Yield: 1 cocktail
Ingredients
- 7 ml (1 1/2 teaspoon) coarse salt, for glass rims
- 50 ml (2 ounces) blanco tequila
- 25 ml (1 ounces) Cointreau
- 40 ml (1 1/2 ounces) fresh lime juice
- Lime slice for garnish
Instructions
- Put the salt on a small plate.
- Rub the edge of a medium highball glass with a piece of lime.
- Turn the rim of the glass into the salt to coat.
- Add tequila, cointreau and lime juice to an iced filled cocktail shaker. Shake until very cold.
- Pour into glasses and decorate with a lime slice.

This is THE only way to have a margarita! Nothing worse than the syrupy stuff that is pre-mixed. Great recipe!!
