Chili Con Carne In The Freezer is a Good Thing

This is a new way of making Chili Con Carne that I just tried and I like it better than my usual recipe.

A couple of points. The real chili heads out there will scream from the rafters there are no beans in chili. There are beans in Chili Con Carne (and She Who Must Be Obeyed likes them).

Next, this chili has some spiciness but it is not very hot. increase the cayenne and add some chili flakes if you want it really hot.

Ingredients:
1 1/2 pounds Lean ground beef
1 1/2 teaspoon Vegetable oil
3/4 teaspoon Salt
1/4 teaspoon Black pepper
1/2 cup Sweet peppers diced
21 ounce Canned diced tomatoes
1 1/2 cup Water
1 1/2 ounces Low salt corn chips by weight
1 tablespoon Soy sauce
1 can (5 oz) Tomato paste
3 teaspoon Vegetable oil
3 cups Onion diced
3 cloves Garlic minced
1 1/2 tablespoon Chili powder
1 tablespoon Cumin
3/4 tablespoon Oregano
1 1/2 teaspoon Coriander
1 1/2 teaspoon Sugar
1/2 teaspoon Cayenne
8 ounce Beer
30 ounces Canned kidney beans rinsed

You start by heating 1 1/2 teaspoons of oil in a large pan over medium heat. Brown the lean ground beef in the pan for 5 minutes. Drain the fat off and season with the salt and pepper. Set aside.

Put the peppers, tomatoes, water, tortilla chips, soy sauce and tomato paste in a blender and process until smooth.

Heat 3 teaspoons in large Dutch oven over medium heat and saute onions for 5 minutes or until they start to leave some colour on the bottom of the pan.

Add the chili powder, cumin, oregano, coriander, sugar, and cayenne. Saute for 30 seconds or until the spices have a nice odour. Add
the beer and simmer for 2 to 3 minutes.

Add the beef, tomato sauce from the blender and the beans. I used white and red kidney beans just for looks. Simmer for fifty to sixty minutes.

We served it with homemade bread and a green salad and still had enough to freeze two more meals for later. Some day when one of you is too busy to cook and buys a burger, I will be having great chili!

The Verdict: This is a nice chili with a rich flavour. The corn chips add a little thickening and a nice texture. This will be a go to recipe.
