Chicken Cordon Bleu is usually deep fried. In an attempt at girth control, I bake mine.
I started with two boneless skinless chicken breasts. I put them between two sheets of wax paper and pounded them to about 3/8 inches thick. Then, I wrapped some sliced of cheese in ham. I used left over ham from a dinner and some home smoked edam. You can use deli ham, prosciutto, or any ham of your choice. The same for the cheese. One of my favourites is Swiss. Make sure the cheese and ham is small enough to wrap easily in the breast.
I put the cheese and ham on the flattened chicken breast and wrapped the chicken around the cheese and ham.
Then I put 1/3 cup of flour with a bit of salt and pepper in it on a plate. I beat an egg and 1 tablespoon of milk in a bowl and put 3/4 cup of dry bread crumbs and 1 teaspoon of Cabela’s Chicken Rub on a plate. You can use any seasoning mix you like instead of the chicken rub.
Roll a breast in the flour, dip it in the egg wash and roll it in the crumbs. Repeat with the second breast.
Put the chicken in a 375 F oven for 20 to 30 minutes until the internal temperature is 165 F.
