I am as game as anybody to do a multistep cook with marinades and special trims, etc. However, sometimes, you just want something easy and delicious. This was one of those days.

They had some country style ribs on sale while I was shopping. I had been meaning to try my Cajun Seasonings on pork so things were coming together.

I rubbed a nice layer of the seasonings over 4 rib portions. You can also do this with thick cut pork chops.

I mixed 5 ml (1 tsp) of seasoning into 50 ml (1/4 cup) of commercial barbecue sauce.

I put the ribs in a my Traeger Timberline at 225 F (105 C) on super smoke setting. I smoked them to an internal temperature of 150 F (65 C) which took 1 hour 20 minutes.

I brushed the ribs with the bbq sauce mixture and smoked for 10 minutes. I gave the ribs a second brushing and smoked for 10 minutes more.

Let the ribs sit for 5 minutes and serve.

The Verdict

One of the reasons I love smoking meat is that you look like a star even when you go easy. These were moist, tender and delicious. There was a nice Cajun flavour and I had done very little work.

Try these. Your friends and family will love them and don’t need to know how lazy you were.
