Bill Wanted White Rolls
My best friend Bill was coming for dinner. Bill likes white bread (no taste), I prefer whole wheat bread (tasty). As I was cooking, guess what he was going to get. However, She Who Must Be Obeyed likes Bill and informed me there would be white rolls.
I hunted around for a plain white roll recipe. I have made several recipes from the breadworld.com site so I went there. I found this recipe for Beginner’s Dinner Rolls. It looked so easy I had to give it a try.
Here is the recipe adapted from breadworld.com.
- 8 1/2 ounces (2 cups) all purpose flour
- 2 tablespoons sugar
- 1 packet (2 1/2 teaspoons) Fleischmann's® RapidRise Yeast
- 1/2 teaspoon salt
- 1/2 cup milk
- 1/4 cup water
- 2 tablespoons butter or margarine
- In the mixer bowl of my KitchenAid, I mixed 3.2 ounces (3/4 cup) of the flour, the sugar, yeast and salt.
- In a Pyrex bowl, I mixed the milk, water and butter and then microwaved it until the temperature was over 120 F but not over 130 F (quite warm but not hot). The butter was not completely melted.
- I added the liquid mixture to the flour in the KitchenAid bowl and attached the paddle. I beat the mixture for 2 minutes on setting 4 (medium), scraping the bowl a couple of times.
- I added another 1.6 ounces (1/4 cup) of flour and beat for 2 more minutes, scraping the bowl a couple of times.
- I added the remaining flour and changed to the dough hook. I mixed it with the dough hook at setting 2 (low) for 10 minutes.
- If you do not have a mixer that has a dough hook or enough power to knead dough, the original recipe at breadworld.com has instructions for kneading by hand.
- Cover the dough with a dry tea towel and let it sit for ten minutes.
- Divide the dough into 12 pieces and shape them into balls. Place them in a 8 inch square greased pan.
- Cover them and let rise until doubled, about 30 minutes.
- Bake them in a preheated 375 F oven for 20 minutes. I like to test with an instant read thermometer. If the internal temperature is 200 F, they are done.
- Run a knife around the edge of the pan and put the buns on a wire rack.
I don’t care for white buns or bread. I think they are bland. However, this was a very nice bun for a white bun and was very easy to make. There was a nice moist texture and the butter and sugar gave it a nice flavour. These are just white buns but they are very tasty white buns. I actually enjoyed them (don’t tell Bill, he still thinks I sacrificed for him).
Anyone who is buying white dinner rolls should try these. They are way better than the ones in the store and take very little effort.

Looks like my light bread rolls, well except for the milk and I use shortening vice butter.
A friend once told me if ya put butter in a pie crust your making cookies. When you put butter and milk in dough is a brioche.

Thanks, Foamheart. One of the aggravating things about cooking is the proliferation of “rules”. As long as the bread tastes great, who cares what it is called.
As for your light bread rolls, how about writing an article and take some pictures to post on the blog? I’d say really good things about you and a guest contributor of your skill would be appreciated.
