KR's Smoked Peanuts
A sweet, spicy smoked nut perfect for snacking.
- 500 grams roasted unsalted peanuts 1.1 pound
- 25 ml butter 2 tbsp, melted
- 15 ml bbq rub 1 tbsp
- 25 ml bbq sauce 2 tbsp
- kosher salt to taste
Put the nuts in a heavy fry pan. Add melted butter and bbq rub. Stir to coat.
Put the nuts in a 250 F (120 C) smoker for 20 minutes, stirring once.
Mix in the bbq sauce and smoke for 20 minutes more, stirring once.
Add salt to taste and spread the nuts out onto a parchment paper lined tray. Put in a 200 F (95 C) oven or smoker for 45 minutes, stirring twice.
Let cool and store in a sealed container.
