I have done lots of videos of bacon cooks on the blog but I needed one for my Community TV show. Here it is!
I have made maple bacon and I have made Chipotle (ground dried smoked chilies). Both are really good. However, I got an email from my niece telling me how much she enjoyed the Chipotle bacon while I was eating some maple bacon. As usual, my brain had a spasm and I thought the two might be great together. I like the combination of sweet/hot. I had to give it a try. I decided to go with Back (Canadian) Bacon and picked up a pork loin. Continue reading Maple Chipotle Bacon
I made another of my series of videos giving detailed instructions on how to make bacon. It is of one of my favourite bacons, Pepper Canadian Bacon. You should know us Canadians call it back bacon but I have given up on that for the purpose of my blog and will call it Canadian bacon. Chalk one up to my American friends! Continue reading Pepper Canadian Bacon, the Video
I like the taste of ground dry chipotle on bacon. Chipotle is made from dried ground jalapenos and add a nice taste with a mellow heat. I have made it before but I make it here with a video on the process. Continue reading Chipotle Canadian Bacon
I make my own bacon and have done several posts. I find mine is less salty and has a nice sweet hit. I decided to try something a little different and seasoned it with some Cajun spices. Continue reading Cajun Back Bacon
I have made a video on how to make Back (Canandian) Bacon that I have made in previous posts!
In my post of Honey Loin Hams I mentioned that I had bought a couple of full pork loins to make some smoked goods for my brother and his family. In this post, I will be making 3 different kinds of back bacon. For my American readers, you call this Canadian bacon although Canadians don’t. Continue reading Back (Canadian) Bacon 3 Ways
I have been experimenting with Berbere Spice for a couple of posts. While I was using it, I had this thought that the complex spiciness would be great in bacon. I am totally unable to resist trying these ideas so, I decided to make some back (Americans call it Canadian) bacon with some Berbere Spice in the cure. I used my A-MAZE-N-TUBE-SMOKER to cold smoke it one day and them my Louisiana Grills Pellet smoker to do a second hot smoke to finish it the next day. Continue reading Double Smoked Berbere Bacon
