I love schnitzel. The crispy coating with the tender moist veal underneath is great. Unfortunately there are two problems. Veal is very expensive and She Who Must Be Obeyed has advised me it isn’t ethical to eat veal. I just don’t want to give up on one of my favourite dishes. Continue reading Chicken Schnitzel
We’ve had a record snowfall here at Passing Wind Estates and you would have to be crazy to go outside and smoke. Colour me crazy! I fired up the Louisiana Grills smoker and made General Tso Chicken Wings! I am even crazier because I could have made these in the oven! Continue reading General Tso Chicken Wings
I have made a video on how to make Back (Canandian) Bacon that I have made in previous posts!
We have lots of snow and it was minus 11. It must be time for something rich with lots of gravy, Slow Cooker Short Ribs. They have the advantage of making the beef, sauce and potatoes all in the slow cooker. Continue reading Slow Cooker Short Ribs
She Who Must Be Obeyed picked up a nice small wild Sockeye Salmon fillet. We were busy (it was suggested I was lazy but that is crazy). I was instructed she wanted it done on the smoker. Normally, that would involve brining and a long cold smoke. I decided to just give it a rub and smoke it at a low temperature. Continue reading Easy Smoked Salmon
Smoking chicken thighs present a problem if you are cooking them at low heat. If you cook them over 350 F, the skin crisps up. Below that, the skin tends to get rubbery. What if your smoker won’t heat up to 350 F or you are cooking pulled pork at 250 F and want to do some chicken at the same time? Can you still make chicken with a crispy skin. Yes! Continue reading Crispy Smoked Chicken Thighs
You may have noticed I haven’t posted for a while. I have been sick with a terrible cold. I am getting over it and decided I needed a treat. So, I made Caramel Apple Rolls. Continue reading Caramel Apple Rolls
Every once in a while, something happens that just improves your mood. I have been suffering from a bad cold for a week and feel terrible. I am in withdrawal from cooking. Then I got some great news.
I have listed a great blog from someone I admire in my blog roll, Foodie Home Chef. In addition to making great food, she has an artists flare for her photography. She has posted a picture of a pastrami sandwich that is work of art! She was also kind enough to give a nod to my PWE Pastrami post. It is a great honour to have someone this talented mention you. Thanks!

I made a video of my post, Kittencals Coleslaw. Check it out!
