OK, I am old. As the name of the blog confirms, I am also fat. One of the contributing factors is that I love bread. I decided if I am going to eat bread, it might as well be healthy with fiber and all that stuff. The problem is that most high fiber breads remind me of a Brillo pad. I love the “Chinese Food” of my youth. I suspect most Chinese mothers would cluck disapprovingly over the suggestion that the food I ate in “Chinese” restaurants when I grew up resembled anything they would serve their families. That being said, I still love it. So, when She Who Must Be Obeyed told me I had a couple of small chicken breasts that she wanted stir fried, I made Chicken Fried Rice like I used to get. Hickory Smoked Cheese

I bought 2 kinds of cheddar, some Monterey Jack and some jalapeno jack.

When I made Bacon in an earlier post, I needed to cold smoke it. I took the opportunity to cold smoke some cheese at the same time. I have smoked cheese before but I always tended toward lighter smoke flavours, oak, cherry or apple for example. I decided I wanted to try hickory this time for a stronger smoke flavour. Steak! With the cost of beef it is becoming a rarer and rarer item on our table. Add to that the fact it isn’t She Who Must Be Obeyed’s favourite meat and I find it a real treat when we pick up a piece of steak. We were cooking a steak. One of the problems with cooking a steak is that it should rest between cooking and eating it. What do you do while the steak is resting? I have tried cuddling with She Who Must Be Obeyed. It took a while to heal. This night, I decided to make some great garlic toast.
