I had made bacon in a prior post. However, I wanted to try it in my new Louisiana Grills Pellet Smoker. The problem is that pork bellies are hard to come by here in the Canadian Rockies. Continue reading Bacon

Apple Jelly Chicken Thighs
Sometimes you just don’t have time for preparation, you just need a meal. Still you want something tasty. I took some boneless skinless chicken thighs, some Bull’s-Eye barbecue sauce and some crabapple jelly and cooked up a meal on my Louisiana Grills pellet smoker in no time. Continue reading Apple Jelly Chicken Thighs
Mincemeat Matrimonial Bar
We made Green Tomato Mincemeat so we had to make something with it. She Who Must Be Obeyed made Mincemeat Matrimonial Bars. She must love me! Continue reading Mincemeat Matrimonial Bar
Green Tomato Mincemeat
We have pulled the tomato plants out and let as many of the green ones ripen inside as are going to get there. That leaves us with lots of green tomatoes and indicates the time to make another batch of Green Tomato Mincemeat. Continue reading Green Tomato Mincemeat
Breaded Chicken Breast on the Pellet Grill

So, I decided to one of my oven standbys in the pellet grill, Breaded Chicken Breast. Continue reading Breaded Chicken Breast on the Pellet Grill

Backwoods Trail Bologna
This is the second part of my first attempt at making sausage on my Louisiana Grills Pellet Smoker. In the prior post I showed the way I made Smokehouse Summer Sausage. I made this bologna at the same time using a mix from LEM products called Backwoods Trail Bologna. I bought the kit version that includes the sausage casings. Continue reading Backwoods Trail Bologna
Smokehouse Summer Sausage
I really like making my own sausage. So, I had to give it a try in my new Louisiana Grills Pellet Smoker. I made Trail Bologna and Summer Sausage. I will show the Summer Sausage in this post and the Trail Bologna in the next. Continue reading Smokehouse Summer Sausage
Grilled Home Fries
I was cooking my steak on the Louisiana Grills Pellet Grill (see prior post). You need great potatoes with your steak. The problem with cooking potatoes on a grill hot enough to cook a steak is that the potatoes will over brown before they are cooked. As I was cooking the steak at 525 F on the pellet grill, this would be a problem. Continue reading Grilled Home Fries
Steak on the Pellet Grill
The next step in my education on the Louisiana Grills Pellet Smoker was to try a steak. I am not independently wealthy so a nice rib steak was out of the question. I picked up a piece of inside round about 3/4 inch thick. Continue reading Steak on the Pellet Grill
