I grow my own potatoes so I get a lot at once. That creates a problem. Potatoes store well for months but they eventually get to a point where you have to use them. You can either eat potatoes for every meal or you can find a way to prepare and store them. This recipe is a delicious way to store potatoes. It also means I have a convenient potato casserole on hand when I need one. Continue reading Frozen Mashed Potato Casserole

Italian Sausage Stuffing
It was Valentines Day. She Who Must Be Obeyed wanted Turkey for dinner. A true romantic bows to the whims of the woman he loves. Turkey it would be. However, turkey requires a great stuffing. I went for another level and made Italian Sausage Stuffing! Continue reading Italian Sausage Stuffing
Greek Fried Potatoes
I love fried potatoes and I love Greek potatoes that are cooked in the oven. Why not put the two together? Welcome to Greek Fried Potatoes. Continue reading Greek Fried Potatoes
Summer Potatoes
When you’re grilling, smoking or roasting, it is nice to have potatoes cooking as a side while the meat is getting done. I often do potatoes in foil and this version with a touch of lemon is particularly nice. Continue reading Summer Potatoes
Mountain Toast
A friend gave me a loaf of bread from a bread machine. I don’t mind bread from a machine but they just don’t seem to have the same texture as regular kneaded bread. However, this loaf was oversized which made it perfect for Mountain Toast on the Weber Genesis Grill. Continue reading Mountain Toast
Fish and Chips My Way
I do not mean to malign the fish and chips you get in a restaurant. I love those deep fried battered fish and potato meals. However, they aren’t the best for you. This is the way I make fish and chips at home and it is a lot lighter. Continue reading Fish and Chips My Way
Berbere Grilled Potatoes
I made my own Berbere Spice mix in a previous post. This spice blend is quite hot but the background flavours to the heat are very nice. I thought the spice and complex flavours would go well with potatoes and fired up the Louisiana Grills Pellet Smoker to grill some Berbere Grilled Potatoes. Continue reading Berbere Grilled Potatoes
Grilled Steak and Potatoes
Here was the situation. It was an unseasonably hot spring day here in the mountains. It seemed perfect to cook a steak. She Who Must Be Obeyed agreed if I did the potatoes and cooked the steak to medium. Sigh, she must be obeyed. I fired up the Weber Genesis grill and went to work. Continue reading Grilled Steak and Potatoes
Steak and Baked Potato Dinner
This post is not a recipe. It an example of how I make a meal. It is about as basic as you can get. I cooked a steak and baked potato on my Louisiana Grills Pellet smoker and used one if its best features, the direct flame grill. Continue reading Steak and Baked Potato Dinner
Smoker Roasted Potatoes
I made Prime Rib in the Louisiana Grills Smoker in the last post. I needed a side dish to go with them and we were not feeling great. Fortunately, She Who Must Be Obeyed love roast potatoes and the smoker was fired up anyway. Smoker Roasted Potatoes it would be. Continue reading Smoker Roasted Potatoes
