I love chicken thighs and think I do a pretty good job on cooking them. I have tried techniques that give crispy skin but have decided I like bite through the skin better. Most commercial bacon is made with a brine that is injected into pork. I prefer dry cured bacon. It is a little firmer and cooks up with a better texture in my opinion.
