I have made summer sausage from kits and from recipes with all kind of exotic ingredients like encapsulated ascorbic acid, Fermento, high temperature cheese, etc. If you know the history of summer sausage, it was made by local people from local ingredients and just included meat and seasonings and then was smoked. With all my experimenting, I found I liked the old simple recipe and it is now my go to. Welcome to OFG Summer Sausage. Continue reading OFG Summer Sausage
You have heard of armadillo eggs if you are a smoker. They are made by stuffing a jalapeno with a cheese mixture and then wrapped in breakfast sausage. The result is smoked and served. Continue reading Huevos De Armadillo
I have given a review of Koss Sauce on my blog. I like it for several reasons. It is a small market product. I have conversed with the owners on social media and they are great people. It is less sugar/tomato based than most barbecue sauces which means it glazes better. All of these are great reasons to be interested in it. However, the only reason I continue to use it is that it tastes great. Continue reading Koss Sauce Chicken
In my previous post, I made Alabama Q Sauce, a white, mayonnaise based sauce. Now, lets use it! Welcome to Alabama Smoked Chicken. Continue reading Alabama Smoked Chicken
Barbecue sauce is tomato based, a nice red colour and has a lot of sweetness, right? Wrong according to many people. There are vinegar, mustard and mayonnaise sauces. I’m sure there are many others. This is my version of a white, mayonnaise based sauce from Alabama. Continue reading Alabama Q Sauce
My Louisiana Grills Smoker does something amazing. It cooks boneless skinless chicken breasts and keeps them moist. I think it is the way the air circulates through the smoker that just seams to seal the moisture in. This is fortunate because She Who Must Be Obeyed buys a lot of them as they are good for me. She must love me! Continue reading Breaded Chicken Breasts in the Smoker
One of the reasons She Who Must Be Obeyed likes it when I smoke or barbecue is that my mess is outside. So, if I am doing meat, she likes it if I do sides, too. This is an easy recipe to some tasty potatoes when I am barbecuing. Continue reading Easy Grilled Potatoes
I had tried one of Rufus Teague’s barbecue sauces before and quite liked it. I was inviting some guests over and some of them are heat adverse. So I decided to try some Rufus Teague Honey Sweet Sauce. Continue reading Rufus Teague Sweet Honey BBQ Chicken Breasts
I made another of my series of videos giving detailed instructions on how to make bacon. It is of one of my favourite bacons, Pepper Canadian Bacon. You should know us Canadians call it back bacon but I have given up on that for the purpose of my blog and will call it Canadian bacon. Chalk one up to my American friends! Continue reading Pepper Canadian Bacon, the Video
The snow is finally gone and we have some warm weather. It has given me the chance to plant my peas, onions, lettuce and spinach. I also put out some tomato plants but I have to protect them with Cozy Coats so the remaining frosty days don’t get to them.
Also, the garlic I planted last fall had come up before the snow was gone! Now they are a few inches high.
I do love growing my own food! Oh, yeah. She Who Must Be Obeyed planted some flowers. OK. I guess.
