Meatballs in Mushroom Gravy

She Who Must Be Obeyed’s family ate a lot of meatballs in mushroom gravy growing up. However, The gravy was basically diluted canned cream of mushroom soup. She loves it. I find it bland.

I was informed that I was making meatballs in mushroom gravy. I decided to use the opportunity to do two thing. First, I wanted to try making meatballs in my Cosori Air Fryer. I have made meatballs in the oven before. The advantage was they kept round but they didn’t really brown well. I hoped making them in the air fryer would keep the shape and brown the surface.

Second, I wanted to sneak some flavour into the cream of mushroom soup gravy. There was trepidation over this. There could be consequences if She Who Must Be Obeyed didn’t like it.

I started by making the meatballs.

I mixed the following together to make a paste:

  • 1  egg
  • 25 ml (2 tbsp) soy sauce
  • 5 ml (1 tsp) Worcestershire sauce
  • 75 ml (1/3 cup) panko bread crumbs
  • 50 ml (1/4 cup) finely chopped onioin
  • 1 clove finely chopped garlic.

I added 500 g (1 pound) of ground beef and tossed with a fork until just mixed.

I formed the mixture into golf ball size and put them in the basket of my air fryer that I had sprayed with baking spray. Don’t let the meatballs touch and cook in batches if there isn’t room. I preheated the air fryer to 370 F (190 C) and cooked the meatballs for 8 minutes. I gave the basket a shake and cooked for 5 minutes more. Make sure the internal temperature is over 160 F (71 C).

If you do not have an air fryer, you can cook the meatballs in a 375 F oven to an internal temperature of 160 F (71 C), 25 to 30 minutes.

While the meatballs are in the air fryer, make the gravy. Heat 15 ml (1 tbsp) oil over medium high heat. Add 50 ml (1/4 cup) chopped onion and, 1 clove chopped garlic. Cook until soft. Add:

  • 1 can cream of mushroom soup, undiluted
  • 125 ml (1/2 cup) water
  • 15 ml (1 tbsp) soy sauce
  • 5 ml (1 tsp) Worcestershire
  • 3 ml (1/2 tsp) ground pepper

Add the cooked meatballs and cook over medium high heat, stirring, until bubbles form. Reduce heat and simmer for 5 minutes, stirring.

Serve.

The Verdict

The meatballs were a total success. The held their shape and got a nice brown colour.

The gravy is as good as I can do to please the boss. Making a sauce with canned soup means you start with a lot of sodium and not much flavour. I was able to get a creamy gravy with some beefy flavours from the soy and Worcestershire but it is still gravy from canned soup. It is tasty but not as good as gravy from scratch.

Please don’t tell She Who Must Be Obeyed I said that.

Ingredients
  

Meatballs

  • 500 grams ground beef 1 lb
  • 1 egg
  • 25 ml soy sauce 2 tbsp
  • 5 ml Worcestershire sauce 1 tsp
  • 75 ml panko bread crumbs ⅓ cup
  • 50 ml onion, finely chopped ¼ cup
  • 1 clove garlic, finely chopped

Gravy

  • 15 ml oil 1 tbsp
  • 50 ml onion, chopped ¼ cup
  • 1 clove garlic, chopped
  • 1 can Cream of Mushroom soup undiluted
  • 125 ml water ½ cup
  • 15 ml soy sauce 1 tbsp
  • 5 ml Worcestershire sauce 1 tsp
  • 3 ml ground pepper ½ teaspoon

Instructions
 

  • Mix all meatball ingredients except the beef into a paste.
  • Add the beef and toss with a fork just until well mixed.
  • Form the beef into golf ball size and shape.
  • Preheat your air fryer to 375 F (190 C). Put the meatballs in a single layer, not touching. Cook in batches if necessary.
  • Cook for 8 minutes. Shake the basket and cook for 5 minutes more. Make sure the internal temperature of the meatballs is over 160 C (71 C)
  • You could also bake the meatballs on a tray in a 375 F (190 C) oven to an internal temperature of 160 F (71 C), 25 to 30 minutes.
  • While the meatballs are cooking, heat the oil over medium heat in a saucepan. Add the onion and garlic and cook until soft.
  • Add the remaining gravy ingredients and mix.
  • Add the cooked meatballs and cook over medium high heat until bubbles form, stirring.
  • Reduce heat to simmer and simmer for 5 minutes, stirring.
