I have posted recipes for Cornbread before. However, my Mom used to make cornbread that she called Johnny Cake. It had just a touch of sweet but was reasonably light for cornbread. I have been working on the recipe and I think I have gotten it!

Preheat your oven to 400 F (205 C).

Mix the following in a large mixing bowl:

  • 50 ml (1/4 cup) melted butter
  • 250 ml (1 cup) milk
  • 1 egg

Beat until well mixed.

In a separate bowl, mix:

  • 300 ml (1 1/4 cup) cornmeal
  • 200 ml (3/4 cup) flour
  • 75 ml (1/3 cup) sugar
  • 15 ml (1 tbsp) baking powder
  • 2 ml (1/2 tsp) salt

Add the dry ingredients to the liquid ingredients all at once. Mix just until the dry ingredients are moistened. Don’t worry about a few small lumps.

Pour into an 8 inch (20 cm) square pan that has been sprayed with baking spray. Shake to level.

Bake for 25 to 30 minutes, until a toothpick inserted in the centre comes out clean.

The Verdict

This is what I remember. It has a nice crispy edge with good chew from the cornmeal. It is not too sweet but has a good flavour that tastes great on its own, buttered, with stew or chili, and as a side to barbecue meat.

It took a while, but I made it. Thanks, Mom!
