Spain on a Fork’s Pan Fried Salmon

One of the best things about social media and blogs is you find talented people who inspire you. That happened when I came across the Spain on a Fork site. The site owner, Albert Bevia, cooks Spanish cuisine that is simple but treats food with respect. I had to add him to my blogroll and try some of his recipes. His is a blog worth checking out. Here is my preparation of his Pan Fried Salmon.

I followed his instructions quite closely. I started by heating a cast iron pan that was just glazed with oil. I like the way it sears over a nonstick fry pan. I put the oil, lemon juice, salt and pepper on the salmon.

I put the salmon skin side down on the pan and seared for about 3 minutes. I flipped and seared the other side.

I squeezed lemon juice over the salmon and sprinkled with chopped parsley.

The Verdict

I have always known that good quality ingredients treated with respect makes great food. This recipe proves that. It is simple but uses bright fresh flavours to enhance the salmon. It has a wonderful crust and the salmon taste is up front with the oil and lemon just enhancing it. It is a great dish and I encourage you to go to Spain on a Fork to try some of their other recipes.
