One of the best thing about food blogging is you meet talented cooks with their own blogs. That is how I found out about Big Rigs ‘n Lil’ Cookies. She has a fun site with great foods and interesting posts.
I had a good crop of zucchini this year so when she posted a recipe for Whole Wheat Zucchini Muffins I marked it for future use. Then She Who Must Be Obeyed told me to use some of the zucchini and I had the recipe ready!

The only change I made was I replaced the chocolate chips with raisins. I did this because raisins are much healthier. The fact I had no chocolate chips had nothing to do with the decision.
I grated the zucchini. You can see the aftermath. She Who Must Be Obeyed suggests I leave a mess. I clean it up but apparently I don’t do it right.
I mixed the dry ingredients up in one bowl. I Mixed the eggs, sugar, vanilla and vegetable oil in another bowl. I stirred the zucchini into that mixture.
I added the dry ingredients to the liquid and stirred just until mixed. I stirred in the raisins.
I put them in the muffin tins and baked them.
I let them cool in the pans and removed.
The Verdict
What a nice muffin. The whole wheat gives a nice rich texture while the zucchini keeps it moist. These will be made for every zucchini crop!

Thank you so much for sharing this 🙂 She Who Must Be Obeyed made such a great decision in wanting some zucchini used. I never thought of using raisins in them, but if we ever run out of chocolate chips (which Truckin’ Man will have words about if that happens!) I will have to try that twist!

I still have zucchini in the garden. These muffins would be perfect to use some of that zucchini. I love zucchini in baked goods. Very yummy!
