Sometimes you deserve the best. That first happened for me when I met She Who Must Be Obeyed. This time, I had two nice beef tenderloin steaks. We deserved them!
When you have great beef, you don’t need to do a lot to make a great meal. I just seasoned the steak with Louisiana Grills Mesquite Rub N’ Grill and cooked it on the Louisiana Grills Pellet Smoker.
I preheated the pellet grill to 510 F.
While it was heating, I gave both sides of the steak a generous shake of the seasoning.
I opened the grate on the pellet smoker to expose the direct flame and put the steak directly over the firebox.
It only takes thirty to forty seconds to get good grill marks. Then I rotated it for another thirty to forty seconds to get a diamond patter.
I flipped the steak and repeated this on the other side.
When I had both sides seared, I moved the steak over the centre of the pellet smoker and cooked it for about 3 minutes a side to get it to medium rare (an internal temperature of 132 F)
I took the steak inside and let it rest.
We like to slice our steak like a roast and served it with Mashed Potato Casserole and mixed vegetables.
The Verdict
A great cut of beef, cooked simply. Enough said.
