Smoked Pork Tenderloin at oldfatguy.ca

Smoked food can take a lot of preparation and long cooking times but there are exceptions. We were shopping and got a nice pork tenderloin for a good price. I used my Louisiana Grills Smoker to do a quick smoke and a great meal.

I mixed a tablespoon of oil with a teaspoon of cider vinegar. I rubbed that all over the tenderloin. Then I sprinkled it with herbs de provence.

I tucked the thin end under so it wouldn’t over cook and put it in the pellet smoker that had been preheated to 200 F. I let it smoke for 45 minutes and then turned the heat up to 400 F. I let it cook until the internal temperature was 155 F. It took 25 minutes.

I took it off the smoker and let it rest for 10 minutes. Then I cut it into medallions.

We served it with Mashed Potato Casserole and mixed vegetables.

The Verdict

This took very little prep time yet the pork is moist and nicely seasoned by the herbs and has a pleasant smoke undertone. A great meal for a lazy Old Fat Guy.
