Some food is so easy and so good that you just have to make it again and again. This is one of those dishes.
When we want an appetizer in a hurry and a real treat, we wrap scallops in bacon and grill them.
We cut strips of bacon in half and wrap large scallops in the bacon. We secure the bacon with toothpicks.
Turn your grill on high and let it preheat. Put the scallops on and turn several them several times until the bacon is nicely browned.
You could also do them under a broiler.
Serve with cocktail sauce if desired.
Soooo good. The crispy salty bacon makes the rich scallops taste terrific. Excuse me, I need to go make more.
