I have visions of entering a barbecue competition. It may never happen as I am way busier when I retired than I thought I would be. However, it is fun to experiment towards a goal.
My first step was to make a competition style barbecue sauce. I tend to use less sweet and salt flavours in my own sauces. So here is my first effort and I will post all the steps on the journey.
Here is the recipe for my first attemtpt:
- 3/4 cup ketchup
- 3/4 cup HP sauce
- 1/4 cup Mustard
- 1 orange
- 1/4 cup molasses
- 1/4 cup cider vinegar
- 1/2 cup soy sauce
- 1 teaspoon garlic powder
- 1 teaspoons onion powder
- 1 teaspoon chili powder
- Remove zest from orange.
- Juice orange.
- Mix orange zest and juice with remaining ingredients.
- Bring to a boil over medium heat. Reduce heat to low and simmer until slightly thickened, about 10 minutes. Remember, it will not be as thick as commercial sauces which add thickening agents. It should coat a wooden spoon dipped in it.
- Cool and store in the refrigerator.
You will not I did not add any salt. The commercial products have lots of salt.
I added the orange and orange peel as I wanted a competition style sauce but I wanted a flavour profile that would make it mine.
I am really happy with the way this turned out. If I’d bought this sauce I would be very happy with it. The orange flavours give it something slightly different from other Kansas City style sauce. However, the orange zest gave it a bit of bitterness that was too strong so I will have to do more work on it.
