Smoked Pork Tenderloin

I love pork tenderloin but it would usually require me pulling my gold teeth to be able to afford it. Great news, they had some on sale. So, I picked one up and decided to smoke it.
I started by mixing together 1/4 cup honey, the grated peal of an orange and the juice of an orange. I brushed that liberally over the tenderloin. I chopped a tablespoon of fresh thyme (you could substitute 1 teaspoon of dried). I added 1 teaspoon of dried rosemary to that and rubbed the herbs into the tenderloin.

I got my WSM Mini fired up and running at a temperature of about 375 F. I put a tray of Quick Grilled Potato Cubes on the grill for 30 minutes. Then I put the tenderloin on and cooked it for about 10 minutes and turned it. I cooked it to an internal temperature of 153 F and that took about 20 more minutes.

I let it rest for about 10 minutes and served with a green salad from our garden.

The Verdict: You have to love pork tenderloin. As the name implies, it is very tender and it takes smoke and seasonings so well. Even if you don’t have a smoker, you can do this in your oven. It is well worth it.
