Rhubarb Pecan Muffins. She Loves Me!


Rhubarb is one of the first things we can harvest here in the mountains. She Who Must Be Obeyed makes these great muffins and made some for me! She must love me.


2 cups all purpose flour
3/4 cup Sugar
1 1/2 teaspoon Baking powder
1/2 teaspoon Baking soda
1 teaspoon Salt
3/4 cup Pecans chopped
1 large Egg
1/4 cup vegetable oil
2 teaspoon Orange peel grated
3/4 cup Orange juice
1 1/4 cup Fresh rhubarb fine chopped


In large bowl, combine flour, sugar, baking powder, baking soda, salt and nuts.

In a medium bowl, beat egg. Add oil, orange peel and juice. Add to flour all at once and stir just until batter is moist. Stir in rhubarb. Lightly grease 12 large muffin cups and fill 3/4 full. Bake at 350° F for 25 to 30 minutes.

The Verdict: These are a favourite treat for snacks or breakfast. They have a heavy cake consistency but aren’t too sweet. The rhubarb adds just a touch of tart without overpowering the muffin.

I love it when the missus makes these.
