Chicken Brochettes for She Who Must Be Obeyed

Spring is definitely here in the mountains. We are busy in the garden every day and we are doing quicker meals. She Who Must Be Obeyed requested Chicken Brochettes.

I didn’t have a lot of time so I cut some boneless skinless chicken breasts into 1 inch cubes and threaded them onto bamboo skewers soaked in water alternating with red peppers, green peppers and mushrooms. I brushed them with Italian dressing and threw them on a medium high grill. It only took about 10 minutes for them to cook and with some of the missus’ great macaroni salad, we were eating a great meal.

Not all fast food comes in a package!
