I made Maple Pepper Bacon Sausage in a previous post. Here, I tried a slightly different method and made breakfast strips out of the sausage meat.

The Verdict – I really liked this the first time I made it. Forming it into a loaf and cutting it into breakfast strips really makes it more of a traditional breakfast dish. The strips cook up and crisp nicely. There is a good pepper and maple flavour. This is a good bacon replacement with great taste and less fat and sodium than regular bacon. This is the way I will make it from now on.
