Bacon Wrapped Stuffed Potatoes

July 30, 2020 David Farrell 2 Comments

I love stuffed potatoes. They add so much flavour and texture to the plain old spud. I decided to go for the ultimate stuffed potato and added extra cheddar cheese and wrapped it in bacon. Continue reading Bacon Wrapped Stuffed Potatoes →

Easy Chicken in the Traeger

July 25, 2020 David Farrell Leave a comment

I love chicken in the smoker. The problem is always the skin. If you want a nice smoke hit, you need to cook low and slow. That yields a rubbery skin. Armadillo Eggs in the Shell

July 23, 2020 David Farrell Leave a comment

If you haven’t heard of Armadillo eggs before, they are a cheese stuffed jalapeno wrapped in sausage and smoked. While they are very tasty, I decided they would be better with a seasoned crispy crust. Welcome to Armadillo Eggs in the Shell! Continue reading Armadillo Eggs in the Shell →

Shrimp Po Boy Sliders

July 22, 2020 David Farrell Leave a comment

Slow Cooker Chicken Stock

July 20, 2020 David Farrell Leave a comment

I like to spatchcock  my chickens when I smoke or grill them. This involves removing the backbone and breast bone so the chicken lays flat. You could throw these trimmings out or you can save them in the freezer until you have enough to make chicken stock. Continue reading Slow Cooker Chicken Stock →

Cheddar Ham Dip

Summer is here and you can have small gatherings outside and still be within our local pandemic guidelines. I like to have premade dips for when I have company over as I can make it ahead and spend time with my guests. This cheesy ham dip is perfect. Continue reading Cheddar Ham Dip →
