I am still messing around with my Louisiana Grills Pellet Smoker and learning how to use it. We like boneless skinless chicken thighs because they have a nice chicken flavourĀ  but not much fat. The downside is they are hard to get perfect. If I cooked them over relatively high heat they seem to get rubbery. If I smoked them low and slow they were tender and had a good texture. She Who Must Be Obeyed wanted wings. We both love wings but she doesn’t like them sticky, she likes them cooked a little crisp. Guess which way we usually have them. In my prior reviews and posts, I have recommended my Louisiana Grills LG900 and it gave me two years of great service. However, since the start of this season, the pellets in the hopper that feed the smoker have caught fire three times. I feel you need this information considering my prior recommendation.

I did a review of my Louisiana Grills Pellet Smoker in a previous post. I covered putting it together and my initial impressions. Being raised in Vancouver, BC, Canada had a major advantage. There were families from all over the world and I had the opportunity to try many different cultures’ food. One of those was jerk chicken. Now I love jerk chicken but I also met people from other parts of the Caribbean. They also did grilled chicken but with different spice profiles. Not all had the allspice base of jerk chicken.
