When you first start cooking you just want good food and you follow recipes that have been tested. However, as you become more proficient, you want to make recipes that suit your tastes. I have posted a recipe for English Muffins before. Those muffins were a little more bread like. Many English Muffins are more spongy. I prefer these softer muffins for eggs Benedict but they are awesome with butter and jam too. The spongy texture means butter soaks right through them! I was raised on canned tomato soup. We had it often. It wasn’t bad but it didn’t have a lot of taste. I have had bacon in my tomato soup and it really kicks it up. I am old enough to remember the days of the stodgy old steakhouses. They had white table cloths, huge hunks of beef and a standard set of appetizers and side dishes. One of the common dishes was Shrimp Louie, shrimp in a tasty pink sauce. It was a rich appetizer served in a chilled glass.
