The problem with most hamburger buns is that they are too large in my opinion. Either you buy the horrible pasty ones in the supermarket or you buy a higher quality bun and it is twice the size. I like a bun that has a nice flavour, a good chew and isn’t so big you don’t notice the burger or other sandwich filling. These Sourdough Onion Buns fit the bill. Char Siu Rib Tips

I don’t know how it is where¬† you are but around here you buy some side ribs (spare ribs) and you get one rack of nice ribs and what I call the trimmings. At first it looks like a rack of ribs but closer examination shows it is full of crossing bones and cartilage with large fat patches. I find if I cook them with the rest of the ribs they are difficult to eat, have a tough texture and it is difficult to avoid getting a large chunk of fat in your mouth. I decided to do something about it and made Char Siu Rib tips in my Louisiana Grills pellet smoker. Of course, you could do them in the oven but they just won’t have the kiss of the smoke. Great fortune befell me! Friends gave me a brisket. They raise their own cattle and this was from a smaller animal than we are used to. As such the brisket was a little smaller and quite lean, very nice! As they gave it to me I decided I should make something I could share with them and I decided to make Montreal smoked meat. She Who Must Be Obeyed likes those casseroles that our mothers used to make. You know the ones, a can of mushroom soup, noodles, cheese and some kind of protein. Mostly they were pretty bland. Who would want those. Ok, they’re not that bad. Don’t look at me like that.¬† Ok, I like them too. However, they can be adjusted to make them more flavourful and made from less processed food.
