We had busy all day and needed supper in a hurry. Quick Chicken Scallopini to the rescue!
I just took two boneless skinless chicken breasts. I put them between two sheets of wax paper and pounded them to 1/4 inch thick with a mallet. Mix 1 teaspoon of your favourite seasoning mix with 1/4 cup of flour and rub it onto the chicken breasts. The classic choice is Italian seasonings but I used Cajun this time. Mix it up as you like.
I put 2 tablespoons of olive oil in a large skillet set medium high. Cook for 3 or 4 minutes a side until the chicken is cooked through and the surface is browned.
I do this a lot when we are in a hurry. It is tasty, quick, easy and way better than fast food from a burger joint or the such.
