Onion Bacon Baked Potatoes On The Grill

It was minus 10 so it must be barbecue weather. She Who Must Be Obeyed wanted Onion Bacon Baked Potatoes. I did as she bade.
These are quite easy to make.

Take large baker potatoes and slice into the potato but not quite through. Make a slice every 1/2 inch. Take a thin slice of onion and push it into each slice.

Wrap a slice of bacon around the potato and wrap it all in foil. Put the potato on the top rack of a barbecue that has been heated to 400 to 450 F. Cook it for an hour, turning every 15 minutes.

You can serve it with sour cream, or yogurt.

The Verdict

This is a long term favourite. The bacon and onion give the potato a nice flavour and the bacon cooks into the potato. Delicious and easy!
