Often, good fresh ingredients don’t need a lot of help. We had some of the baby new potatoes left. They have a great taste and a creamy texture. There just isn’t a lot of need to mess with them.
For this dish, I tossed them with just enough olive oil to coat them and crumbled some dried rosemary over them. I put them in a 425 F oven for 40 minutes stirring them a couple of times.
Great creamy new potatoes with a little crisping of the skin and a touch of rosemary. Absolutely delicious.
