Cajun Grilled Shrimp

Sometimes, easy is best. When it comes to shrimp, I don’t like a lot of fuss. They taste just great on their own.

Shrimp is very expensive here in the mountains. Our local supermarket had some frozen shrimp on sale for less than the going rate for platinum. So, I picked some up.

Of course, fresh would be better but I haven’t won the lottery so that will have to wait.

I started by shelling 12 of the medium sized shrimp. I melted 1/4 cup of butter and added 1 teaspoon of Cajun spice. You can add any spice mix you like. I just felt like Cajun on this occasion.

Toss the shrimp in the butter.

I put a tray with small holes made for cooking smaller items on my Weber Genesis grill and preheated it over high heat. I tossed the prawns on and they cook very quickly. Flip them as soon as they get some colour on one side, about 1 minute.

Flip them and cook for another minute or until translucent. Don’t over cook unless you like pencil eraser texture.

We served these as a meal with salad and yogurt marinated cucumber. They would also make a great appetizer.

The Verdict

This has a great shrimp taste and just a touch of spice which doesn’t overpower the natural flavour. Also, what doesn’t taste great cooked in butter!
